Beef Korma is a rich and aromatic Indian dish that combines tender pieces of beef with a creamy, flavorful sauce. This dish is known for its exquisite blend of spices and its ability to tantalize your taste buds. Here, we'll explore the ingredients, preparation, and steps to create this delectable dish.


Ingredients


For Marinating Beef:

1. 500 grams of beef, cubed

2. 1 cup yogurt

3. 1 tablespoon ginger-garlic paste

4. 1 teaspoon ground turmeric

5. 1 teaspoon red chili powder

6. Salt to taste


For the Korma Sauce

1. 2 tablespoons vegetable oil or ghee (clarified butter)

2. 2 large onions, finely sliced

3. 2-3 green chilies, slit lengthwise (adjust to your spice preference)

4. 1 tablespoon ginger-garlic paste

5. 1/2 cup cashew nuts, soaked in warm water

6. 1/2 cup yogurt

7. 1 teaspoon ground coriander

8. 1 teaspoon ground cumin

9. 1/2 teaspoon garam masala

10. 1/2 teaspoon ground cinnamon

11. 1/4 teaspoon ground cardamom

12. 1/4 teaspoon ground cloves

13. Salt to taste

14. Fresh coriander leaves and sliced almonds for garnish


Instructions


1. Marinate the Beef

   - In a mixing bowl, combine the beef cubes, yogurt, ginger-garlic paste, ground turmeric, red chili powder, and salt.

   - Mix well, ensuring that the beef is evenly coated with the marinade.

   - Cover and refrigerate for at least 2 hours, or overnight for best results.


2. Prepare the Cashew Paste

   - Grind the soaked cashew nuts into a smooth paste using a little water. Set aside.


3. Cook the Beef

   - Heat the vegetable oil or ghee in a heavy-bottomed pan over medium heat.

   - Add the marinated beef and cook until it's browned on all sides. Remove the beef from the pan and set it aside.


4. Prepare the Korma Sauce

   - In the same pan, add more oil if needed and then add the sliced onions.

   - Sauté the onions until they become golden brown.

   - Add the green chilies and ginger-garlic paste. Sauté for a few more minutes.

   - Add the ground coriander, cumin, garam masala, cinnamon, cardamom, and cloves. Cook for another 2-3 minutes until the spices release their aroma.

   - Reduce the heat and stir in the cashew paste and yogurt. Cook for a few minutes, allowing the sauce to thicken.

   - Return the cooked beef to the pan and simmer for about 30-40 minutes, or until the beef is tender and the sauce has thickened to your desired consistency.

   - Adjust the salt and spice levels according to your taste.


5. Serve

   - Garnish the Beef Korma with fresh coriander leaves and sliced almonds.

   - Serve hot with steamed rice, naan, or roti.
