 Chicken Karahi

Chicken Karahi is a delicious and aromatic Pakistani and North Indian dish that's known for its rich flavors and unique cooking style. It's typically made in a wok-like pan called a "karahi," which gives the dish its name. This recipe will guide you through the process of making Chicken Karahi at home.

Ingredients:

  • 500 grams boneless chicken, cut into bite-sized pieces
  • 2-3 tablespoons cooking oil
  • 1 large onion, finely chopped
  • 2-3 tomatoes, finely chopped
  • 2 green chilies, sliced (adjust to your spice preference)
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped for garnish
  • Fresh ginger, julienned for garnish
  • Lemon wedges for serving

Instructions:

  1. Marinate the Chicken: Start by marinating the chicken pieces with ginger garlic paste, red chili powder, turmeric powder, and salt. Mix well and let it sit for at least 30 minutes to allow the flavors to penetrate.

  2. Heat the Cooking Oil: In a large karahi or a wide, heavy-bottomed pan, heat the cooking oil over medium-high heat.

  3. Add Cumin Seeds: Once the oil is hot, add the cumin seeds and let them sizzle for a few seconds until they release their aroma.

  4. Sauté the Onions: Add the finely chopped onions and sauté until they turn translucent and start to brown around the edges.

  5. Add Tomatoes and Spices: Add the chopped tomatoes, green chilies, coriander powder, and a pinch of salt. Cook this mixture until the tomatoes become soft and the oil starts to separate from the mixture. This will take around 5-7 minutes.

  6. Cook the Chicken: Add the marinated chicken pieces to the tomato-onion mixture. Cook the chicken on medium-high heat until it changes color and becomes opaque. Stir occasionally to ensure even cooking.

  7. Simmer and Cover: Reduce the heat to low, cover the karahi with a lid, and let the chicken simmer for about 15-20 minutes, or until it's fully cooked and tender. Stir occasionally to prevent sticking, and add a splash of water if it becomes too dry.

  8. Add Garam Masala: Once the chicken is cooked, sprinkle garam masala over the dish and mix well. Adjust the salt and spice levels to your taste.

  9. Garnish and Serve: Garnish your Chicken Karahi with freshly chopped coriander leaves and julienned ginger. Serve hot with naan, roti, or steamed rice. Don't forget the lemon wedges for a tangy kick!

Enjoy your homemade Chicken Karahi, packed with the flavors of aromatic spices and juicy chicken pieces. It's a perfect dish for gatherings or family dinners, and its delightful taste will surely leave your taste buds wanting more.
