Ingredients


* 500 grams of mutton, cut into bite-sized pieces

* 2 onions, finely chopped

* 2 tomatoes, chopped

* 4 cloves of garlic, minced

* 1-inch piece of ginger, grated

* 2-3 green chilies, slit

* 2 tablespoons of cooking oil

* 1 teaspoon cumin seeds

* 1 bay leaf

* 4-5 whole cloves

* 2-3 green cardamom pods

* 1 cinnamon stick

* 1 teaspoon turmeric powder

* 2 teaspoons coriander powder

* 1 teaspoon red chili powder (adjust to taste)

* 1 teaspoon garam masala

* Salt to taste

* Chopped fresh coriander leaves for garnish

* Water


Instructions


1. Marinate the Mutton

   - In a large mixing bowl, combine the mutton pieces with half of the minced garlic, half of the grated ginger, turmeric powder, and a pinch of salt.

   - Cover the bowl and let the mutton marinate for at least 30 minutes. You can marinate it longer for a richer flavor.


2. Prepare the Spice Paste

   - Heat a dry skillet over medium heat and roast the cloves, cardamom pods, and cinnamon stick for a minute or until fragrant.

   - Allow the spices to cool slightly, then grind them into a fine powder using a spice grinder or mortar and pestle.


3. Cook the Mutton

   - Heat the cooking oil in a heavy-bottomed pot or pressure cooker over medium heat.

   - Add the cumin seeds and bay leaf, and let them sizzle for a few seconds.

   - Add the chopped onions and sauté until they turn golden brown.

   - Stir in the remaining minced garlic, grated ginger, and green chilies. Cook for another 2-3 minutes until the raw smell disappears.

   - Add the marinated mutton pieces and sear them until they turn brown on all sides.


4. Add the Spices

   - Sprinkle the ground spice powder, coriander powder, red chili powder, and salt over the mutton.

   - Mix well to coat the mutton with the spices.


5. Add Tomatoes

   - Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture.


6. Pressure Cook

   - If using a pressure cooker, add enough water to cover the mutton.

   - Close the lid and cook for about 3-4 whistles or until the mutton is tender.

   - If using a regular pot, add water, cover, and simmer on low heat for 1.5 to 2 hours or until the mutton becomes tender. You may need to add more water during cooking to prevent it from drying out.


7. Finish with Garam Masala

   - Once the mutton is cooked and the gravy has thickened, add garam masala and mix well.


8. Garnish and Serve

   - Garnish the mutton curry with fresh coriander leaves.

   - Serve hot with steamed rice or Indian bread like naan or roti.
