Sooji ka Halwa, also known as Semolina Halwa, is a traditional Indian dessert loved for its simplicity and delightful taste. It's a sweet treat made from semolina (sooji), ghee (clarified butter), sugar, and flavored with cardamom and garnished with nuts. This dessert is often prepared during special occasions, festivals, or as a quick dessert option for unexpected guests. Here's a step-by-step guide to making this delicious Sooji ka Halwa.

Ingredients

1. 1 cup of sooji (semolina)

2. 1/2 cup of ghee (clarified butter)

3. 1 cup of sugar

4. 2 cups of water

5. 1/2 teaspoon of cardamom powder

6. A handful of chopped nuts (almonds, cashews, and pistachios)

7. A pinch of saffron strands (optional)

Instructions

1. Roasting the Sooji

 Heat a heavy-bottomed pan or kadai on low to medium heat and add the sooji. Dry roast it while continuously stirring until it turns light golden brown and emits a nutty aroma. This step is crucial for the texture and flavor of the halwa.

2. Adding Ghee 

In the same pan, add the ghee. Keep stirring the mixture on low heat. The ghee will slowly coat the roasted sooji, giving it a glossy appearance and rich flavor.

3. Preparing Sugar Syrup 

In a separate pan, heat the water and sugar to create a sugar syrup. Stir until the sugar dissolves completely. You can also add saffron strands for a hint of color and fragrance.

4. Mixing the Ingredients

 Gradually, pour the sugar syrup into the sooji-ghee mixture while stirring continuously to avoid lumps. Be cautious, as the mixture may splutter when you add the syrup. Keep stirring to ensure a smooth consistency.

5. Flavoring with Cardamom

Add the cardamom powder for a delightful aroma and flavor. Continue to cook and stir the mixture until it thickens and leaves the sides of the pan.

6. Garnishing

 Now, add the chopped nuts to the halwa and mix well. Reserve some for garnishing on top.

7. Serving Onc

 the halwa reaches the desired consistency, remove it from the heat. Serve hot, garnished with the remaining nuts.

Sooji ka Halwa is best enjoyed when served hot, as it tends to thicken as it cools. The rich, sweet, and aromatic flavors make it a delightful treat for any occasion. You can also customize it by adding raisins, shredded coconut, or even a few drops of rose water for a unique twist.
